Produced by Magnasco, the oldest dairy company in Argentina, this Edam cheese is made in virtually the same manner as the Dutch original - including the red paraffin wax coating Edam cheese is known for. However, this Argentinian version of Edam is a bit sharper and a lot harder than its namesake. Founded in 1855, Magnasco is one of the leading dairy producers in South America. The company is still operated by the founder's descendants. Magnasco uses only milk from their own dairy farms to ensure quality and consistency in their products. Argentina is home to endless miles of grazing pastures. The fertile plains or 'pampas' of Argentina allow cattle to be fed year-round from green pastures highly suited for quality dairy production. Hard enough to grate, it makes a fantastic topping for rice or pasta. Made from pasteurized cow's milk, it can be sliced and served with bread or crackers and a full-bodied red wine.
